Preparation How to Make Torta al Testo with Prosciutto, Pecorino, and Caramelized Figs
Heat the Torta: Take your Testo (the traditional cast iron or refractory cement griddle used for baking the bread). If you don’t have one, don’t worry a large non-stick pan will work perfectly. Place it over the heat. Once hot, lower the flame and place the Torta al Testo inside. Warm it on both sides over low heat. Caramelize the Figs: Meanwhile, peel the figs and slice them. Melt a small knob of butter in a non-stick pan, add the figs and a sprinkle of sugar, and cook until caramelized. Assemble: Slice the warm Torta al Testo in half horizontally.
