It originates from a blend of international grapes, including Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, which demonstrate the exceptional suitability of the Bolgheri area for "Bordeaux-style" blend wines. For years, this style has been a true hallmark of the territory.


History of Clarice Wine and the Dario di Vaira Family

The Clarice Bolgheri D.O.C. is a Red Wine produced by the Dario Di Vaira Farm, whose owner, Dario, represents the third generation of his family. The family immigrated to Bolgheri from Molise in the 1950s. Dario inherited the business from his father in 2008 and, with a degree in viticulture and enology, has focused on producing high-quality wines, particularly the D.O.C. Bolgheri wines. The harvest is done manually into crates, followed by an overnight stay in a temperature-controlled environment to cool the grapes. After destemming and crushing, the alcoholic fermentation and maceration take place. This process is carried out separately for each varietal in stainless steel and non-vitrified cement tanks at a controlled temperature of no more than 28°C, lasting for 15-18 days.

Regarding the organoleptic characteristics and olfactory notes of the Clarice Bolgheri Rosso D.O.C., maturation occurs in a combination of vessels for 9 months before bottling: 40% in new and second-passage French oak barriques, 50% in cement tanks, and 10% in French oak tonneaux (large barrels). Upon tasting, the primary aromas mingle with sensations derived from the aging period spent in wood, shaping a sip that is round and refined, decisively embracing the palate with a pleasant degree of warmth.

The Clarice Bolgheri Rosso D.O.C. is particularly well-suited for pairing with meat dishes. This includes first courses with flavorful ragù (meat sauce), marbled red meat, pork, and game (selvaggina). It is also excellent to try with aged cheese.
