Finocchiona I.G.P. Salami

Finocchiona I.G.P. (Protected Geographical Indication) is a typical Italian cured meat from the Tuscan provinces of Arezzo and Siena. It boasts a history spanning over five hundred years, believed to date back to the early Renaissance. The name of this salami clearly derives from its preparation: it is made with minced pork, flavored with fennel seeds, and bathed in local red wine. Since 2015, Finocchiona has been protected by the I.G.P. status. To be considered authentic Finocchiona I.G.P., it must be produced in Tuscany according to strict regulations regarding its ingredients (using premium cuts of pork shoulder, belly, and leg). It must also bear the green and white seal of the Consortium alongside the yellow and blue I.G.P. logo.


A Tuscan Salami with Over 500 Years of History

Legend has it that Finocchiona was offered by tavern keepers to wine buyers to "anesthetize" their taste buds with fennel. This way, even poor-quality wine seemed excellent giving rise to the Tuscan term "infinocchiare," which means to deceive or "hoodwink." In the Middle Ages, black pepper was a precious spice imported from the East at prohibitive costs, often used as a form of currency. Tuscan butchers, famous for their thriftiness, sought a local and affordable alternative to flavor and preserve pork. They found the solution in the fields: wild fennel. The seeds and flowers, abundant in the Tuscan countryside, were not only free but possessed natural antiseptic properties and an aroma intense enough to mask any potential flaws in the meat's preservation. Despite its "humble" origins, Finocchiona soon became a favorite of the nobility. Historical documents recount that even Pope Leo X (of the Medici family) was a great admirer and had it sent regularly from Florence to Rome. Even Machiavelli frequently alluded to the pleasures of the Tuscan table in his letters, citing cured meats that closely resemble Finocchiona.

Finocchiona I.G.P. is a characteristically soft salami with a perfect flavor balance between the savoriness of the pork, the freshness of the fennel, and light notes of garlic and red wine (often Chianti). It is a high-quality artisanal product aged for a minimum of one month and encased in natural casings. Its perfect pairing is with unsalted Tuscan Bread. It is excellent as an appetizer, a main course, or a snack, especially when accompanied by Pecorino Toscano D.O.P. and a fine glass of Chianti wine.
